Ingredients
4 Italian sausages (sweet or spicy)
3 bell peppers (red, yellow, green), sliced
1 large red onion, sliced
2 tbsp olive oil
1 tsp dried oregano
1 tsp dried basil
½ tsp garlic powder
½ tsp crushed red pepper flakes (optional)
Salt and black pepper, to taste
Fresh parsley or basil, chopped (for garnish)
Instructions
1. Preheat the oven to 400°F (200°C). Line a large sheet pan with parchment or foil.
2. In a bowl, toss sliced bell peppers and onion with olive oil, oregano, basil, garlic powder, red pepper flakes, salt, and pepper.
3. Spread the vegetables evenly on the sheet pan. Nestle the sausages on top.
4. Bake for 35–40 minutes, flipping sausages halfway through, until they are golden and reach 160°F internally.
5. Optional: Broil for the last 2 minutes for extra caramelization.
6. Garnish with fresh herbs and serve hot.
Notes
You can substitute chicken or turkey sausage for a lighter version.
Add cherry tomatoes or thin-sliced fennel for more variety.
