Ingredients
- 4 large Russet potatoes (skin on, scrubbed)
- 2 tablespoons olive oil (or peanut oil for frying)
- 1 teaspoon fine sea salt (plus more to taste)
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder (optional)
- Paper towels (for draining)
Instructions
Cut the Potatoes:
Using a waffle fry cutter or mandoline with a wavy blade, slice the potatoes into waffle shapes. Rotate each potato 90° between slices to get the signature crisscross pattern.Soak the Slices:
Place the potato slices in a bowl of cold water and soak for at least 30 minutes. This helps remove excess starch and ensures a crispier fry.First Fry (325°F/163°C):
Heat oil in a deep fryer or heavy pot to 325°F (163°C). Fry the potatoes in small batches for about 3 minutes. Remove and drain on paper towels.Second Fry (375°F/190°C):
Increase the oil temperature to 375°F (190°C). Return the partially cooked fries to the oil and fry again for 2–3 minutes, or until golden brown.Season:
Transfer fries to a paper towel–lined plate. While still hot, sprinkle with salt, paprika, and any additional seasonings you like.Serve & Enjoy:
Plate the waffle fries and serve immediately with your favorite dipping sauce.
Notes
- For an extra kick, add a pinch of cayenne pepper to the seasoning.
- You can bake these waffle fries at 425°F (220°C) for 25–30 minutes if you prefer a lighter version (though they won’t be quite as crispy).
- Keep fries warm in a low oven (around 200°F/93°C) if frying in multiple batches.
