Description

This comforting chicken and gravy recipe is perfect for a cozy family meal. Tender chicken meets a rich, savory gravy that warms you from the inside out.

Ingredients

Scale
  • 1 whole chicken (about 3–4 lbs), cut into pieces (or 4–6 bone-in chicken pieces)
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth (plus extra if needed)
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt (adjust to taste)
  • 1 teaspoon black pepper (adjust to taste)
  • 1 teaspoon garlic powder
  • Optional: fresh herbs like thyme or rosemary

Instructions

  1. Season the Chicken

    • Pat the chicken dry and season generously with salt, pepper, and garlic powder. If using fresh herbs, sprinkle them over as well.
    • Let the chicken rest for 10–15 minutes to absorb the flavors.
  2. Sear the Chicken

    • In a large skillet or pan, melt the butter with olive oil over medium-high heat.
    • Place the chicken skin-side down and sear until golden brown, about 3–4 minutes per side.
    • Remove the chicken pieces and set them aside on a plate.
  3. Make the Gravy Base

    • Reduce the heat to medium.
    • Stir in the flour, mixing it with the pan drippings to form a roux.
    • Slowly pour in the chicken broth, whisking constantly to avoid lumps.
    • Allow the gravy to simmer for a few minutes until it thickens.
  4. Combine & Simmer

    • Return the chicken to the pan, nestling it into the gravy.
    • Cover and let the chicken simmer over low to medium heat for 20–25 minutes, or until the chicken is fully cooked (internal temperature of 165°F).
    • If the gravy becomes too thick, add a splash of extra broth or water.
  5. Serve & Enjoy

    • Taste and adjust seasonings as needed.
    • Serve the chicken hot, generously topped with the homemade gravy.
    • Pair with mashed potatoes, steamed veggies, or biscuits for a complete meal.

Notes

  • For extra flavor, use bone-in, skin-on chicken pieces—bones add depth to the gravy.
  • If you prefer a creamier gravy, stir in a small splash of heavy cream right before serving.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
