- 1 ½ cups graham cracker crumbs¼ cup granulated sugar
- ½ cup melted unsalted butter
- 4 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- ⅔ cup sour cream
- ⅔ cup heavy cream
- 2 cups fresh strawberries, hulled and halved
- ½ cup granulated sugar (for topping)
- 2 tablespoons lemon juice
- 1 tablespoon cornstarch mixed with 2 tablespoons water
Instructions
- Preheat oven to 325°F.
- Mix graham cracker crumbs, sugar, and melted butter until combined.
- Press into the bottom of a 9-inch springform pan and bake for 10 minutes. Let cool.
- In a large bowl, beat softened cream cheese and sugar until smooth.
- Add vanilla and then the eggs one at a time, mixing gently.
- Stir in sour cream and heavy cream until just combined.
- Pour into the crust.
- Wrap the springform pan in foil and place in a water bath.
- Bake for 55–65 minutes until the edges are set and the center slightly jiggles.
- Turn off the oven, crack the door, and let sit for 1 hour.
- Refrigerate for at least 4 hours or overnight.
- For the topping, combine strawberries, sugar, and lemon juice in a saucepan.
- Cook over medium heat until strawberries soften.
- Stir in the cornstarch slurry and simmer until thickened.
- Cool completely. Spoon over the chilled cheesecake before serving.
Notes
Use a water bath to prevent cracking.
Do not overmix the batter.
Let the cheesecake chill overnight for best flavor and clean slices.
